Angelfish, barracuda, wahoo, triggerfish, conch and the island delicacy, whelk (a snaillike shellfish found on the rocks along the coast), as well as the familiar grouper, mackerel and tuna, fill fishermen's nets. A nutritious, low-calorie source of fatty acids, fish is a popular food choice. The Crucian catch of the day is boiled, grilled, pan-fried, simmered in butter sauce, and steamed. It is made into fish cakes, fritters and puddings and added to chowders and stews. Fish, shellfish and speciality side dishes derive their trademark taste from the creative use of herbs and spices. As the islanders do, we washed it all down with a cool maubi--a bittersweet drink made of bark, herbs and spices the locals believe to be good for health and digestion. To complete our meal, sample luscious pies and tarts filled with local coconut, guava and guavaberries. Discovering native Crucian cooking can be an exciting adventure. A Taste of St. Croix is a wine and food event that showcases the diverse and delicious cuisine (and wines) available on the island. A Taste of St. Croix welcomes both island visitors and island residents to participate in the event. This event benefits the St. Croix Foundation, a non-profit organization that works diligently to revitalize the US Virgin Islands Guests can sample an amazing variety of foods, from Cajun to Lebanese, Creole, Italian, French, and many exciting Caribbean recipes that take advantage of the local fruits, vegetables and spices.
